    Just for your knowledge-One pound of Honey has about 1.035 specific gravity on average when mixed with water to make one gallon. In all honesty, I would put the honey in a sealed container for long term storage. It will crystalize but heating it will turn it back to a liquid.

    Welllll thanks so much for that , now I know what my problem was lol , I use powdered honey for making meals in a jar for my family only I refuse doing it again :) we are able to buy it from a factory here in Australia , I was horrified how much of a mess it can make in the machine , same with peanut paste , thanks so much for doing this , I've learnt something new :)

    So when we did our peanut butter, I remember it turning out to be oily on top. Which makes sense as I didn't add an emulsifier when prepping it. Interesting results with the honey. What would you use as an emulsifier for the heavy cream?

    So what about oils that are left behind on the trays once you scoop the food? I’ve seen it from chef boy ardee, from spaghetti sauces etc. it’s actual oil that you can smear with your finger yet the food is dry. Will it store long term?

    Jif peanut butter uses palm oil to keep the peanut oil from separating. Is the xanthan gum still necessary or would the results be different when using a peanut butter with just peanuts and salt as the ingredients? I'm just curious. Great video anyway and thank you for the test.

    There’s a google sheets on freeze drying honey. It’s in Chinese but you can use google translate. If I remember correctly honey was thinned to 1/10 to freeze dry properly.

    IMHO you do NOT want to use an OA for storing sugar or likely honey as well. I have several #10 cans of sugar that were sealed with OA's and they turned into a solid block of sugar. It is essentially un-useable (unless I dissolve it in water) and YES it was dry when the lid was sealed on. There is some interaction between sugar and the OA that causes it to turn into a solid mass of granules. Not to mention that sugar is shelf stable as is without the OA.

      @DM-fz3ly You’re not the first to say not to use an OA for storing sugar but you are the first I’ve read that gives an example why not. At my local grocery store someone has put up a display of freeze dried candy (skittles for example). I haven’t purchased any to check on them but have wondered about OA’s. Would you guess there aren’t any in them? The bags the product is packaged in are the “clear on one side” kind. I’ve inspected them for any known violations of cottage laws and it appears they are in compliance with the possibility of whether they sold the product to the grocery store or not (selling to the grocer directly as a middleman is illegal in my state). The bags are not in direct sunlight, but I wonder if the ambient light will affect the candy within.

      @@MisterEMystery for short term candy they probably have a dessiccant packet (silica gel) or nothing at all. Also the window pouches are not at all good for long term storage and generally only for short term snacks and candy. I can't even get the sugar out of the can due to the ring indentations around the outside. I gave up on it and figure if armeggedon comes we will figure out how to use it (last) I probably have 24 to 36 cans of the solid sugar. I only opened 1 to find it solidified.

    Thanks for doing this. since you are experimenting with high fat items, is there any hope for this to work with butter or lard or tallow? This is one area of long term prepping I haven't found an answer to -- very long term fat storage. If you continue with peanut butter, could you choose one that is only peanuts and not sugar and other things added such as Jiff? Many of us don't want the additives. Thank you for considering our thoughts.

    You should never add an OA to sugar or honey. A desiccant would’ve worked better. There is no fat in honey. Yes, nitrogen flush would be ideal. That’s what I use for everything. * I need to add that I appreciate you always being honest and your candor. 😃

    Yes, please do PB and the cream ASAP. Holidays coming and powdered cream is used in a lot of recipes (especially hot chocolate mix). As part of testing, can you do buttermilk as well? Thanks for all you do in the FD Universe😊

    You’re adding the salts and minerals from the water to the food when you add water, unless you’re adding distilled water. So your food is nit just the FD’d food. It’s the FD’d food plus the extra salt and minerals from the water.

      Thanks for asking. I forgot about it. First, you scared me! I know I suck at time management and timeliness of getting projects done, but 3 years! I had to look it up; the video was 3 1/2 years ago, but the oldest gnocchi question was "only" about 1 1/2 years ago. 🤣 Anyway, we have done a couple tests of gnocchi and they can be made to work fine. I'll try to follow up with sharing freeze drying some gnocchi.

    Why would you even attempt to do honey, when pure honey lasts forever all by itself? Am I missing something? Oh, maybe because you want to add it in a recipe you want to freeze-dry?!

      I don't think you're not missing anything. I don't think freeze drying honey is a good thing for the honey, it will probably make it last less time. I'm trying the honey (and the peanut butter) for two main reasons: 😁 1) Because viewers have asked me to show freeze drying honey a number of times, and 2) Because some people said it wouldn't work. (Which practically forces me to try) Dried honey-containing products are sold, so I assume people are using it for something. I don't know what they (the people who have asked) would use it for, but I guess there could be times you might want to be able to sprinkle a bit of honey on the top of something where it wouldn't work to drizzle it. I'm not sure. But I have freeze dried things because people have asked for them, that I wouldn't have otherwise. - Some candies, Cheerios, zucchini, beets, coffee, water. . .

      Thanks for watching and for commenting! No, I have never considered washing off my chicken. (or our cooked ground beef, either) We do, of course, drain the fat if/when we cook the meat. I have read the nutritional label, so I have a very good idea about the amount of fat. Still pretty lean. I wonder if the "washing" foods came from the dehydrating world, and just made its way into the freeze drying world when some people crossed from one to the other. Another viewer suggest this because they used to dehydrate and now they freeze dry. They said it was a needed step for dehydrating. This is my views of fats - Putting Lots Of Fat In The Freeze Dryer.       I agree, when I did sour cream I think it had a kind of grainy/gritty texture after rehydrating. Okay for putting in a recipe, but no good on my taco. I'll have to try some experiments with sour cream again to figure out the best way to freeze dry and rehydrate it and keep it creamy.

      You need to add hot water to it and then refrigerate it. The graininess is the butter not coming back. You need to melt it in again. The same is true of cream cheese.

    Hi there again, friends! I’m revisiting this one. I make salmon burgers using canned salmon. With your insight, would you make the patties and freeze dry them WITHOUT cooking them? Or would you cook them well and freeze dry them that way? They are REALLY sloppy and soft until cooked with the egg and breadcrumbs in them! They firm up greatly once cooked on a cast iron skillet, though!

      Sounds good! Personally, I think I'd cook them before freeze drying them. (I'd probably do a small test with the raw to see it it works any better) Cooked vs Raw: In general (assuming similar shelf life) I would prefer to have as much of my stored food as possible already cooked and ready to eat, except for those foods we could eat raw anyway. That way, even if cooking or rehydrating later is not an option (for whatever reason), the food would still be able to provide immediate calories and nutrition.

    Please follow up on this! Peanut butter is the Holy Grail of freeze drying (Cryo freeze dryers) and actually working long term! Promising results Sir.

      Freeze dried PB is the Holy Grail? I thought it was sliced bread! 🤣🤣 So far the peanut butter is looking good. I'll open a bag and check it in a couple days it see it it's still looking good before I post the video. I will do another round of testing with PB with different brands, too.

    I’ll get to your On The Go videos eventually. The 2 hour one is kind of long. I was able to sit and watch the 1 hour, but I wasn’t excited about anything longer. The van videos- I don’t know when I’ll get to those. I, too, haven’t been freeze drying in awhile. The peanut butter and honey look promising.. in that the videos will be informative, not that they’ll sublimate.

      I can certainly understand not watching the long videos! 🤣 I do think the trip home was more interesting than the trip there. I listen to the long shows/videos (VivaFrei, MugClub, Bill Whittle, Darkhorse) in the background on one screen while I'm editing on the other screen.

    I think that might have been the same patent I found when searching for a way to FD peanut butter (it's been quite a while). I didn't use an emulsifier (it called for one) - just did PB and a water mixture, and it turned out just fine. Put it into a blender when done, and voila - powdered peanut butter.

      I wouldn't be surprised if it were the same patent! It's the only good source I've found about freeze drying peanut butter. What brand PB did you use? I will probably try some more, adding different amounts of additives and using different brands of PB.

      @@SchoolReports Unfortunately I don't remember 100%. I think it was either Gif or a store brand - I tried both chunky and smooth types.
